I'm not one to try something the first time for guests but for you hearty, fly-by-the-seat-of-your-pants folks I offer:
Heart Healthy Pumpkin Pie Recipe
8 Servings
Ingredients:
2/3 cup sugar
1/2 ts ground cinnamon
1/2 ts ground ginger
1/2 ts ground nutmeg
1 pinch ground cloves
1 1/2 cup canned pumpkin
1 1/2 cup fat-free evaporated milk
1/4 cup brandy
3 lg egg whites; slightly beaten
1 ts vanilla extract
1/2 ts orange zest (grated rind)
1 low fat; (9-inch) pie shell
Instructions for Heart Healthy Pumpkin Pie
Preheat oven to 450 degrees. In a large bowl combine sugar, cinnamon, ginger, nutmeg and cloves. Add pumpkin, evaporated milk, brandy, egg whites, vanilla and orange zest. Beat until smooth. Pour into pie shell. Bake for 10 minutes. Reduce heat to 325 degrees and bake for 45 minutes, or until a knife inserted in the center comes out clean.
